Muffin batter usually consists of flour, eggs, sugar, baking powder, and butter or oil. The dry ingredients need to be mixed with the wet ones, and it's ready. Add-ins also play an essential role. You can add fruits, nuts, vegetables, or cheeses to the muffins. They are still most popular in the sweet version, but savoury muffins also have their fans.

It is often said that muffins are best right after baking. There's some truth to that, as their batter can dry out quickly. However, you can prepare them differently, and they will be moister and stay fresh longer. It's a trick known from other baked goods that also works in this case. It's about adding buttermilk.

What are the properties of buttermilk?

Buttermilk is a useful ingredient in baking. Its subtle acidity makes the batter fluffier and moister, and it also helps the batter rise evenly and beautifully. This is because the lactic acid in buttermilk activates the baking soda.

Buttermilk enhances the flavour, giving it a more intense and slightly milky taste. This type of dairy also helps the batter stay fresh longer, which is why it is perfect for muffins.

Buttermilk muffins

Ingredients:

  • 2 cups all-purpose flour,
  • 1/2 cup sugar,
  • 2 eggs,
  • 1 cup buttermilk,
  • 1/3 cup oil, such as canola,
  • 100 g grated dark chocolate or your favourite fruits,
  • 1 flat teaspoon baking soda,
  • 1 flat teaspoon baking powder.

Preparation method:

  1. Start by mixing the eggs with sugar into a fluffy mass.
  2. Then add the buttermilk and oil. Mix again.
  3. Combine the flour with baking soda and powder, and add to the other ingredients.
  4. Add your favourite add-ins to the prepared mixture and mix.
  5. Spoon portions of the batter into muffin moulds or liners.
  6. Bake the muffins in an oven preheated to 190°C (375°F) for about 30 minutes.
  7. You can decorate them with powdered sugar before serving.
