Transform your meals with quick and crisp pickled onions

Homemade burgers are a fantastic idea for lunch, offering a refreshing change from traditional meals with potatoes and salad. Mini burgers are also ideal for parties – they look great on a buffet table and are perfectly sized for three bites. They taste best with colourful additions in homemade milk buns. You can make them with meat or try a vegetarian version. Adding one crunchy ingredient to both is highly recommended.

This crispy addition will also be suitable for Christmas Eve herring.

Ever since I discovered how quick and easy this addition is to prepare, a jar of pickled onions has become a staple in my refrigerator. The flavourful, slightly spicy rings go well not only with burgers but also with everyday sandwiches or more refined tartare. I can't believe how quickly they disappear.

Pickled onions – ready in just a few hours

The preparation itself takes less than 5 minutes. However, to achieve the right crunchiness and flavour, you need to wait a few hours. They are best the day after soaking. If you want to speed up the pickling time, use wine vinegar instead of apple vinegar, and slice the onions thinner.

How to use the crunchy addition in holiday dishes?

Pickled onions are an excellent addition to Christmas and holiday dishes. Their distinct flavour goes well not only with burgers but also with traditional herring in oil. It's a kind of magic ingredient – it adds character to roasted fish, and when finely chopped, it even works in dumpling filling or vegetable salad.

Quick recipe for pickled onions

To make the onion more delicate, you can pour boiling water over it before placing it in the jar.

Ingredients:

  • 3 red onions,
  • 2 teaspoons of salt,
  • 1 tablespoon of sugar,
  • a few mustard seeds,
  • a few allspice berries,
  • 60 millilitres (2 fluid ounces) of apple vinegar,
  • hot water to fill the jar.

Instructions:

  1. Peel the onions and slice them thinly, then place them in a prepared, clean, and sterilized jar.
  2. Add salt, sugar, and spices. Pour hot water over them (it shouldn't be boiling).
  3. Screw the lid on the jar and turn it upside down a few times to mix the ingredients.
  4. Allow to cool. Place in the refrigerator for at least a few hours.

How long can you store pickled onions?

Pickled red onions can be stored in the refrigerator for up to 4 weeks, provided they were prepared correctly. It's important that the jars are clean. To be sure, it's worth sterilizing them in the dishwasher, including the lids. The onions intended for pickling must be fresh – the vinegar brine should not be a solution for spoiling vegetables. It's also important to make sure they are fully submerged in the marinade.
