Vegetarian recipes redefine meat-free dishes
In many homes, a meatless diet is observed as more popular. Some people opt for tofu. However, sometimes a change is welcome, and that's where great vegetarian recipes come in. My latest discovery is patties made with mushrooms and oats. They taste remarkably similar to ground meat.
I completely understand that not everyone fancies a salad or pasta for dinner. I know fans of traditional flavours who can't satisfy their appetite with lighter substitutes. For such people, the recipe for meatless patties works well, which you can serve with potatoes and a side salad.
Patties rich in fibre and vitamins
One of the two main ingredients of these à la ground meat patties is rolled oats. They are not just an excellent filler ensuring consistency and shape, but also a highly valued ingredient.
Rolled oats are less processed than similar instant oats. As a result, they contain more fibre and have a lower glycemic index. Their only downside is that they need more time to soften. Before adding them to the patty mixture, pour boiling water over them and leave them for 10 minutes.
How to make à la ground meat patties without meat?
To prepare 10-12 medium-sized patties, you need:
- 1/2 cup of rolled oats,
- 1/2 pound of mushrooms,
- 1 onion,
- 1 egg,
- 2 cloves of garlic,
- 3 tablespoons of all-purpose flour,
- 1/2 cup of breadcrumbs,
- 1 teaspoon of dried thyme,
- salt,
- pepper to taste
- and canola oil for frying.
Preparation
- First, prepare the ingredients. Peel the onion and garlic and chop them into small pieces. Wash the mushrooms and also cut them into small pieces.
- Heat a tablespoon of oil in a pan and sauté the onion with garlic and mushrooms. Add seasoning - a pinch of salt, pepper, thyme. Heat until the water evaporates. Set aside to cool.
- Mix the cooled mushrooms with the soaked oats. You might want to squeeze out the excess water beforehand. Add the egg and flour. Form patties with your hands and coat them in breadcrumbs.
- Fry in a heated pan with a small amount of oil until they are golden brown on both sides.
Ideas for other vegetarian patties
With oats, you can also make patties using beets or legumes, such as lentils, chickpeas, or beans. Shaped into larger circles, they are great for veggie burgers.
A good idea for a meatless dinner is zucchini and carrot patties. These, in turn, taste excellent topped with wild mushroom sauce.
