Warming up to African peanut soup: A new comfort classic

When the temperature drops and frost greets us in the morning, warming, delicious soups come back in favour. Instead of reaching again for cucumber soup or broth, I prepare a large pot of African peanut soup.

It is creamy, thick, and filling, and the addition of peanut butter gives it a unique flavour. Add tomatoes, aromatic spices, and there's nothing left but to be delighted and reach for another serving. This soup will perfectly warm you up after coming home and immediately bring a smile to your face.

The world of soups is full of possibilities, flavours, and unique combinations, so it's worth stepping out of your comfort zone and trying something new. African peanut soup is a delicious recipe for dinner that will impress your loved ones. You can prepare it in a vegetarian version or add chicken.

The heart of African soup is peanut butter. It's worth choosing one that consists solely of nuts, without added fats, preservatives, or salt. If you have a good blender at home, you can make it yourself with peanuts. Fortunately, more and more stores offer ready-made peanut butter with good ingredients.

Ingredients:

  • 1 large onion,
  • 2 garlic cloves,
  • a piece of ginger,
  • 1 tablespoon vegetable oil,
  • 1 teaspoon cumin,
  • 1/2 teaspoon ground coriander,
  • 1/2 teaspoon chili powder,
  • 1 can diced tomatoes,
  • 1 litre vegetable or chicken broth,
  • 250 mL peanut butter,
  • salt and pepper to taste,
  • juice of 1 lime,
  • fresh cilantro leaves for serving.
  • peanuts for garnish.

Preparation:

  1. Sauté the chopped onion and pressed garlic in hot oil.
  2. Add cumin, grated ginger, coriander, and chili, and sauté for a while. Adjust the amount of chili to your preference.
  3. Add canned tomatoes, broth, peanut butter, salt, and pepper.
  4. Cook over medium heat for about 15-20 minutes, until the soup thickens.
  5. Blend the soup with a blender until smooth. If the soup is too thick, add a bit more broth.
  6. Season the soup with lime juice and sprinkle with fresh cilantro and crushed peanuts. Serve hot.

If you want to prepare the soup with chicken, sauté it in a separate pan and add after blending. You can also add puff pastry peas or chickpeas. Enjoy!
