Warming up winter: Savour the rich taste of gyros soup

When the temperature outside drops, it's a great time to reach for warming and hearty dishes. Soups become popular once again, wrapping you in a comforting warmth from within. During the winter season, consider trying aromatic gyros soup. It captivates with its flavour from the very first spoonful.

While chicken broth or tomato soup warm you up, you're quickly hungry again after having them. Gyros soup, however, keeps your stomach content and envelops you in comforting warmth. This hearty and flavourful soup is perfect for both lunch and dinner.

Gyros soup - recipe for a warming meal

Gyros is typically associated with chicken or salads, but its flavour works well in soup too. The bowl is filled with ingredients like chicken, colourful peppers, corn, and aromatic spices.

Prepare a whole pot of soup in one day, and you can simply reheat it when you come home for your next meal. A warm, invigorating soup will delight you with its taste and warmth after a long day. To make it even more filling, you can add rice or orzo pasta.

Ingredients:

  • About 450 grams of chicken breast fillet,
  • About 1.5 litres of vegetable broth,
  • About 100 millilitres of sweet cream,
  • 2 teaspoons of tomato paste,
  • 3 bell peppers (green, red, yellow),
  • 2 onions,
  • 3 cloves of garlic,
  • About 250 grams of mushrooms,
  • About 100 grams of corn,
  • 2 teaspoons of gyros seasoning,
  • 1 teaspoon of herbes de Provence,
  • 2 teaspoons of sweet paprika,
  • Salt and pepper to taste,
  • Canola oil,
  • Feta cheese.

Instructions:

  1. Cut the chicken into cubes and place it in a bowl.
  2. Add a teaspoon of oil, gyros seasoning, herbes de Provence, and sweet paprika, and mix thoroughly. Fry in a pan.
  3. Remove the chicken from the heat and stir in the cream.
  4. Chop the onion and sauté it with the garlic, pressed through a garlic press.
  5. Add sliced or diced peppers to the onion and fry together.
  6. Transfer the vegetables to a large pot, add chopped mushrooms, chicken with cream, tomato paste, and pour in the broth.
  7. Cook covered for about 20 minutes once the soup starts to boil.
  8. Towards the end of cooking, add cream and season with salt and pepper. You can also add more gyros seasoning, sweet paprika, and herbs, or enhance the flavour with chili.

Serve the ready soup with crumbled feta and bread. Enjoy!
