Jamie Oliver's fluffy banana pancakes
Ingredients:
- 2 ripe bananas,
- 125 mL of oats,
- 250 mL of 2% milk,
- 500 mL of flour,
- 1.5 teaspoons baking powder,
- 1 teaspoon vanilla extract,
- olive oil for frying,
- 4 heaped teaspoons of your favourite jam,
- peanut butter for serving,
- a handful of thawed fruits for serving.
Instructions:
- Start by peeling one banana and blending it into a smooth purée.
- Add the oats, milk, flour, baking powder, vanilla extract, and a pinch of sea salt, then blend again until the ingredients are combined.
- Peel and slice the second banana into thin slices. Heat a large non-stick pan over medium heat.
- When hot, add a teaspoon of olive oil. Drop small portions of the batter onto the pan, placing a few slices of banana on each portion, gently pressing them into the batter. Cook for 2 to 3 minutes until the edges start to bubble and the pancakes are lightly golden, then flip and cook for another minute.
