In the fall and winter, we don’t have access to fresh vegetables from the garden, and not everyone has time for homemade preserves. Most of us face a dilemma: should we buy imported vegetables or perhaps opt for less visually attractive frozen ones? The answer is simpler than you might think.

Among frozen vegetables, cauliflower stands out for having more nutritional value than fresh ones out of season.

Why is frozen cauliflower the better choice?

The key factor is when you decide to freeze the vegetable. Although cauliflower can last in the fridge at a temperature of 0 degrees Celsius for up to 5 weeks, it's not worth delaying. Freshly picked, ripe vegetables contain the most vitamins and minerals. Over time, they lose nutritional value. If you freeze cauliflower at its "peak condition," you preserve what is most valuable in it.

How to freeze cauliflower so it doesn’t turn gray

Raw cauliflower, when frozen, will develop an unappetizing greyish colour. Blanching comes to the rescue. A quick thermal treatment ensures the florets retain their white colour and do not lose valuable properties.

Put the divided cauliflower into boiling water for 2 minutes. Remove it with a strainer and rinse with cold water. Then spread the vegetable on a tray and pat it dry with a paper towel. Place the tray in the freezer for about 30 minutes. Once the cauliflower is hard, you can transfer it to appropriate containers or zip-lock bags.

What to look for when buying frozen cauliflower

It’s time to replenish your supplies. Supermarket shelves are stocked with frozen vegetables, but which are the best to choose? First and foremost, take a look at the product's contents. There should be no additives, but make sure it says: 100% cauliflower. If the package is transparent, check if the florets have a natural colour. Healthy cauliflower should not have brown spots.

Of course, also check the expiration date and choose a product with the latest date. Finally, ensure the packaging is sealed tightly, and the cauliflower is not already partially thawed.

Frozen cauliflower in the kitchen

High-quality frozen vegetables significantly simplify meal preparation. You can toss cauliflower florets into boiling water immediately after removing them from the freezer. If you're in the mood for traditional cauliflower with breadcrumbs, cook it for 5 minutes, drain the water, and toss it into a skillet.

You can also put still frozen vegetables in the oven. They will be excellent after 35 minutes at a temperature of 170 degrees Celsius. Roasted cauliflower works great as a side dish or snack, for example, with a nut sauce.
