Beef slips are undoubtedly a classic in the culinary world. We typically prepare the pork variety. However, sometimes we seek a touch of luxury and wish to create something different. Slips with pickles and bacon are ideal for such occasions.

Occasionally, I like to experiment in the kitchen and prepare something that would impress even chefs in high-end restaurants. I usually present such refined dishes during Sunday dinners when the entire family gathers. Recently, I made beef slips with pickles and bacon. Needless to say, they vanished from the platter in no time. The combination of tender beef with the accompaniments and the mushroom sauce is unforgettable. These beef slips differ in taste from the classic pork ones. In my view, they are more delicate.

  • 8 slices of smoked bacon,
  • 4 pickles,
  • 3 tablespoons of mustard,
  • 1 onion,
  • 2 cloves of garlic,
  • chilli powder,
  • oil,
  • a bit of flour,
  • 5 medium mushrooms,
  • 2 tablespoons of clarified butter,
  • 240 millilitres of water,
  • 1 teaspoon of honey,
  • 2 tablespoons of cream,
  • salt and pepper.

Instructions:

This recipe will guide you through the preparation. Read it carefully and follow the instructions. Making such beef slips will take about an hour, but in return, you can serve something delicious for dinner. Here are the instructions:

  1. Slice the meat, pound it with a mallet, and season with salt, pepper, and chilli powder. Then, immediately spread mustard over it.
  2. Place finely chopped bacon and pickles cut into thin strips, onion, and garlic on each piece. Roll them into rolls and secure with a toothpick or thread.
  3. Melt the butter in a pan, and sauté the finely chopped onion and garlic. After a moment, add washed and sliced mushrooms.
  4. Coat the beef slips with bacon and pickles in flour, brown them on all sides in oil, and place them in a pot. Pour water over them, add a bay leaf, onion, garlic, mushrooms, and honey, and simmer the dish on low heat. Check occasionally to see if the meat is tender enough.
  5. Temper the cream and flour by adding hot water. Mix the concoction thoroughly and pour everything into the slips. Remember to stir vigorously to prevent lumps from forming.
  6. Serve the beef slips with bacon and pickles alongside potatoes and a salad. Pickles or lightly salted cucumbers also nicely complement the dish.
