Scrambled eggs are one of the simplest dishes to prepare, but they can be made much tastier by omitting the milk. Although many people typically add milk to eggs, it turns out that it can make the scrambled eggs watery and cause them to lose their natural flavour.

The secret to fluffy scrambled eggs

Adding liquids to scrambled eggs increases the cooking time, which raises the risk of them becoming rubbery and overcooked. While browsing a cookbook, I came across a recipe that suggested using cornflour to thicken the eggs and improve their texture.

I decided to try this method while preparing breakfast, and to my surprise, the scrambled eggs were fluffier and had a creamy taste. After a brief search online, I discovered that cornflour surrounds the egg proteins, helping them retain moisture and preventing them from coagulating too quickly. This results in scrambled eggs with a smoother and silkier consistency, without the need to add cream or milk.

Method for perfect scrambled eggs

Ingredients:

  • 2 eggs
  • 1 tablespoon cornflour
  • butter for frying
  • seasonings to taste

Preparation:

  1. Crack two eggs into a bowl and add a tablespoon of cornflour.
  2. Mix the ingredients thoroughly until the cornflour is completely dissolved.
  3. Melt some butter in a pan. You can use smoked paprika-flavoured butter to add extra aroma to the scrambled eggs.
  4. When the butter has melted, add the egg mixture and immediately start stirring.
  5. Continue stirring so the eggs cook evenly.
  6. When the scrambled eggs are almost done, remove them from the heat and let them rest for a minute.
  7. Transfer the scrambled eggs to a plate, season with pepper, and wait for the toast to be ready.

Scrambled eggs are a dish that can be prepared in many ways, each with its own advantages. The key to success is the right frying technique and ingredient selection. With a variety of additions and culinary tricks, scrambled eggs can become not only a delicious but also a healthy start to the day.
