Crispy potato salad
Ingredients:
- 900 grams of small potatoes,
- 2 tablespoons olive oil,
- 1/2 teaspoon salt,
- black pepper,
- 200 grams of bacon,
- 170 grams mayonnaise,
- 60 grams of cream,
- 2-3 tablespoons finely chopped pickles,
- 2 tablespoons fresh parsley,
- 2 tablespoons fresh chives,
- 1 tablespoon lemon juice,
- 1 teaspoon Dijon mustard,
- 1 stalk of celery,
- 1/2 small red onion,
- 1/2 teaspoon sugar.
Instructions:
- Preheat the oven to 200°C.
- Fry the bacon to your liking and cut it into smaller pieces.
- Cut the potatoes in half, mix with olive oil, salt, and pepper, then place them on a baking sheet.
- Bake for 15-20 minutes until golden and soft.
- Mash the potatoes, drizzle with olive oil, and season with salt.
- Bake for another 20-30 minutes until crispy.
- In a large bowl, mix the remaining ingredients, then add the potatoes and bacon.
- Serve with additional parsley.
