Quick and easy: Delight in cottage cheese pancakes

Do you also get those cravings for something sweet when your cupboards are empty? You might not want to go to the shop, but that doesn't mean you have to forgo something delicious! All it takes is a few ingredients and literally a moment's work to whip up fluffy, delicate cottage cheese pancakes.

This recipe is perfect when you're pressed for time and don't feel like turning on the oven or kneading complex dough. What's more, you don't even need a mixer. Everything can be done in one bowl with a spoon or fork. And even though the ingredients are simple, the result is astonishing: the pancakes are light, springy, and truly tasty.

Cottage cheese pancakes are a speedy treat for your sweet tooth

The ingredient list is simple and short. The main star is cottage cheese, giving the pancakes their unique character. If you prefer a dessert-like version, add a spoonful of cocoa or a few drops of vanilla extract. You could also go wild with cardamom, cinnamon, or even a hint of rum flavour. The only limit is your imagination (and the contents of your cupboard).

Ingredients:

  • a tub of cottage cheese,
  • 2 eggs,
  • 3 oz of plain flour,
  • a teaspoon of baking powder,
  • a teaspoon of sugar,
  • butter or oil for frying (a little, the cottage cheese pancakes should be frying, not struggling for life in an oil bath).

Method:

  1. Mix all the ingredients in a bowl. No need to blend. It’s fine if the mixture is a bit lumpy, as long as the ingredients are combined.
  2. You can also add cocoa, rum, cinnamon, coffee - anything that suits your fancy with these pancakes.
  3. Heat the pan and add a bit of fat.
  4. Spoon portions of the batter onto the pan, gently flattening them.
  5. Cook the pancakes on a medium heat for 2-3 minutes on each side until they are golden brown.

Important: don’t fry on too high a heat - the outside can easily burn while the inside may remain raw. It's better to give them time to rise gently.

What to serve with cottage cheese pancakes?

What you add on top changes the entire dish. You can choose something classic, fruity, or more indulgent – as befitting a dessert. An interesting idea is sauces such as chocolate, honey, or yoghurt-vanilla. They will add an intriguing character to your snack, bringing out the best and highlighting all the contrasts.
