Are you tired of the usual pancakes? Fancy adding something healthier yet equally delicious to your menu? I've got just the thing for you! Meet oat pancakes, which are becoming favourites among fans of light eating. And trust me, you don't have to be a fitness influencer to appreciate them!

When you hear "healthier version," you might think of bland imitations of your favourite dishes, right? For instance, skyr with coconut flakes masquerading as Raffaello haunts my dreams. But fear not, oat pancakes! These are entirely different. They’re delicate, springy, with a subtle nutty flavour. Perfect for breakfast with fruit or even a savoury dinner with avocado spread. Plus, you can whip them up in mere minutes without the need for a food processor or mixer.

Instead of using classic wheat flour, you'll be using ground oats, which are nutritious and gentle on the digestive system. This is an excellent choice if you wish to cut down on gluten, improve your diet quality, or simply try something new. No need to deny yourself anything; just swap ingredients wisely.

Why are oat pancakes so good?

Oat flour is a star in many fitness recipes. Even if you're not counting calories, you'll appreciate its taste and benefits. It's rich in fibre, contains plenty of B vitamins, and provides a satisfying feeling of fullness. This means that after having a portion of these pancakes, you won't find yourself hungry an hour later, as often happens with classic wheat flour pancakes.

You can make oat pancakes using either ready-made oat flour or oats you've ground in a blender. Grinding them takes just 15 seconds, and you can easily do it with a standard hand blender. Feel free to add a touch of cinnamon, vanilla extract, or even cocoa to the batter if you fancy something more dessert-like. It all depends on your imagination, concept, and what you've got stashed in your cupboards or fridge.

How to make oat pancakes?

Now that you're familiar with the advantages of these pancakes, let's prepare them.

Ingredients:

  • About 140g of ground oats,
  • About 300ml of milk (or plant-based milk – almond is low in calories, while soy is protein-rich),
  • 2 eggs,
  • A tablespoon of oil (for the batter),
  • A pinch of salt,
  • Oil for frying (preferably rapeseed or olive oil),
  • Optional if you desire sweetness: some sugar or another sweetener.

Instructions:

  1. Combine all the ingredients in a bowl and mix well using a whisk, mixer, or blender.
  2. Allow the batter to rest for 10 minutes so the flour can swell and thicken.
  3. Heat a pan with a little oil and fry the pancakes on both sides until golden. Voilà!

Oat pancakes pair wonderfully with fruits (such as banana, raspberries, etc.), cottage cheese, or yoghurt sauce. You can also enjoy them savoury: with avocado spread and egg, with spinach and feta, or with chicken and cheese.
