Simple pleasures: Bake delightful cupcakes without a mixer

It often doesn't take much to delight the taste buds and create a delightful afternoon snack. Just a few simple ingredients and minimal effort to mix the batter are required. This recipe is perfect for a lazy weekend or when the afternoon sweet cravings strike. Any occasion becomes the right time for some indulgent cupcakes.
Simple cupcakes without a mixer
This recipe is one to keep handy when a sweet craving hits. Dry ingredients are combined with the wet ones, and after about 15-20 minutes in the oven, you have cupcakes so tasty that stopping at just one will be difficult. They could easily grace the shelves of any bakery.
A toothpick or long skewer will come in useful for baking. Use it to check if the inside is done. This recipe is just the starting point for experimenting with cupcakes. You can enhance the batter with grated lemon zest, chopped nuts, raisins, or cranberries, add chocolate pieces or a few drops of flavouring. Fill the centre with pudding, jam, or chocolate. Simply pour some batter into the mould, add the filling, and cover with additional batter.
Ingredients:
- 2 cups of plain flour,
- 150g of sugar,
- 2 teaspoons of baking powder,
- 1 packet of vanilla sugar,
- a pinch of salt,
- 250ml of milk,
- 1 egg,
- 120ml of vegetable oil.
Instructions:
- In a bowl, combine plain flour, sugar, baking powder, and salt, and mix well.
- In another large bowl, combine the oil, egg, and milk.
- Add the dry ingredients to the wet ingredients and mix with a spoon or spatula just until combined.
- Fill the cupcake moulds with the batter to about two-thirds full. You can add your chosen filling halfway through filling.
- Place in an oven preheated to 180 degrees Celsius and bake for about 15-20 minutes, until a toothpick comes out clean. The baking time depends on the size of the moulds.
Once baked, you can decorate the cupcakes with a dusting of icing sugar, a glaze, or chocolate frosting. Whipped cream with mascarpone and fresh fruit also makes a lovely topping. Enjoy!
