Banana waffles reinvented: A sugar-free treat

Bananas are one of my favourite fruits. I always buy them when I crave something sweet but don't want to reach for processed foods. I usually eat them as a quick snack, but they also make a great base for various baked goods or pancakes. When I remember my waffle iron sitting unused in the kitchen, I quickly fire it up and prepare banana waffle batter. Their sweetness means I don't have to add a single gram of white sugar.

Banana waffle recipe

To prepare these waffles, you need a waffle iron and a banana, as you can modify many of the other ingredients to suit your tastes. You can easily substitute spelt flour for the wheat flour, and instead of oil, you can use melted butter. Baking powder will help the batter rise a bit, making the waffles fluffy and smooth. I recommend using a vanilla-flavoured plant-based milk instead of regular milk to enhance their taste and aroma. Decorate the waffles to your liking, for example, with whipped cream, fruit, or maple syrup.

Ingredients:

  • 1 ripe banana,
  • 200g wheat flour,
  • 40ml oil,
  • 1 egg,
  • 1 teaspoon baking powder,
  • a pinch of cinnamon,
  • 150ml milk,
  • powdered sugar,
  • whipped cream.

Preparation:

  1. Mash the peeled banana with a fork.
  2. Add flour, oil, egg, baking powder, cinnamon, and milk.
  3. Mix everything with a whisk until the ingredients are combined. Then let the batter sit for 10 minutes to puff up.
  4. Heat the waffle iron and pour the batter onto it.
  5. Serve the finished waffles with whipped cream or sprinkle them with powdered sugar.
