In this version, you don't need to bake anything—simply layer the ingredients in a tall glass or jar to create a delightful dessert.

Where did banoffee come from?

Banoffee is a pie that was created in England in 1972, and it quickly gained popularity nearly worldwide. The name of this dessert comes from combining the words "banana" and "toffee". Instead of baking a whole pie, you can opt for banoffee in a cup.

Banoffee in a jar consists of layers of crumbled biscuits, toffee spread, fresh bananas, and a creamy layer. This perfect combination will appeal to all your guests. Plus, it looks so inviting that before you know it, the glasses will be empty.

Mini no-bake banoffee

This recipe uses the iconic Lotus Biscoff biscuits. However, if you can't find them in the store, you can use digestives or oat biscuits as an alternative.

Ingredients:

Vanilla cream mixture:

  • 500g mascarpone,
  • 350g vanilla skyr,
  • 5 tablespoons icing sugar,
  • 1 packet of whipped cream stabiliser.

Other ingredients:

  • 3 bananas,
  • 250g Lotus Biscoff biscuits,
  • 200g toffee spread.

Preparation:

Step 1. Transfer the mascarpone to a bowl, add the vanilla skyr and icing sugar, and mix until smooth.

Step 2. Place the biscuits in a food processor and blend them into a fine mixture. Slice the bananas into medium-thick slices.

Step 3. Layer the ingredients in a jar: biscuits, bananas, toffee spread, more biscuits, bananas, toffee, and cream.
