Oat flakes are not just a base for porridge but also a valuable ingredient for delicious baked goods. They are tasty, nutritious, and easy to prepare, making them ideal for a tasty snack.

Oat muffins are a perfect choice for a tasty snack. Even those who roll their eyes at the sight of porridge will love them. The addition of bananas provides the right sweetness, and chocolate further enhances the overall flavour. During the fruit season, it's worth adding blueberries or currants to the mixture.

Why is it worth reaching for oat flakes?

Oat flakes are one of the most valuable sources of nutrients. They are rich in fibre, protein, vitamins (especially B vitamins), and minerals such as iron, magnesium, and zinc. The high fibre content in oatmeal promotes regular bowel movements and helps prevent constipation.

You can substitute chocolate for raisins, nuts, cranberries, or dried fruits. The riper the banana, the sweeter the muffins will be.

Ingredients:

  • 1 cup of oat flakes
  • 1 banana
  • 1 egg
  • 120 ml of milk
  • 1 teaspoon of vanilla sugar
  • 1/2 teaspoon of bicarbonate of soda
  • a pinch of salt
  • 2 tablespoons of honey
  • 2 tablespoons of chopped chocolate

Preparation:

  1. Mix the dry ingredients in a bowl: oat flakes, bicarbonate of soda, and salt.
  2. In a separate bowl, blend the wet ingredients: mashed banana, egg, milk, and vanilla sugar.
  3. Combine the wet and dry ingredients.
  4. Add honey or maple syrup and the chopped chocolate. Dark chocolate works best, but you can also use chocolate chips for baking.
  5. Transfer the batter into muffin moulds, filling them up to two-thirds of their height.
  6. Bake for about 20 minutes at 180°C.

Remove the muffins from the oven and let them cool in the moulds for a few minutes before removing them to a rack. Enjoy!
