An omelette is a versatile dish that we most often associate with breakfast. Traditionally, it is made from beaten eggs and can be served both sweet and savoury. More complex versions include omelettes with added flour, similar to sponge cakes. But is it possible to prepare an omelette in a healthier version?

The best omelette additions

For a light omelette, only two main ingredients are needed: eggs and cottage cheese. This combination is often recommended by nutritionists to start the day. Preparing an omelette takes only a moment, so you can enjoy such a breakfast even during the week. What are the ideal additions to this omelette? Certainly, vegetables. At this time of year, the selection is wide, with tomatoes, bell peppers, cucumbers, or radishes all making great choices. You can always add some rocket, lettuce, or spinach leaves.

Why an omelette is perfect for breakfast

Eggs and cottage cheese make a good duo, especially for those on a diet. Eggs are a great source of high-quality protein, which is also easily digestible. This means they provide long-lasting satiety and energy. They also contain essential cholesterol and plenty of vitamins – D, A, E, and those from the B group. Furthermore, they have iodine, phosphorus, calcium, and omega-3 fatty acids. Adding cottage cheese makes the meal even more nutritious. Cottage cheese is also rich in protein, easily digestible, and has a neutral taste.

Omelette with cottage cheese

Ingredients:

  • 200g cottage cheese,
  • 2 eggs,
  • 2 tablespoons instant oats,
  • a few rocket or lettuce leaves (optional),
  • a few cherry tomatoes,
  • a tablespoon of grated yellow cheese (optional),
  • salt and pepper to taste,
  • clarified butter for frying.

Preparation method:

  1. Mix the cottage cheese with the eggs. Thicken the mixture with oats. Season to taste.
  2. Heat butter in a frying pan. Pour in the mixture and cook on a medium heat for a few minutes. Once the omelette sets, flip it over.
  3. Continue cooking for about 3 more minutes. Serve warm with rocket or lettuce leaves, cherry tomatoes, and grated cheese.
