Are you sitting in front of your computer, but you're already admiring mountain views in your dreams? We have an idea for a dish to bring a holiday vibe closer. Of course, it's just a taste, but what a delicious one. Prepare Ustrzyki-style chicken, and the days until your vacation will pass faster.

If you choose meat on such hot days, it's usually poultry. Chicken is delicate and easily digestible, with plenty of protein. And the dish we propose has another advantage—it doesn’t require frying.

Originates from Ustrzyki

Ustrzyki-style chicken? I don't know if the residents of Ustrzyki prepare poultry this way, but it requires cheese, specifically Ustrzyki roll cheese. This type of cheese indeed originated in Ustrzyki Dolne. Many dairy cooperatives offer it, and you can easily buy it nationwide.

With a mountain character

Mountain cheeses have a distinctive character. This is true for Ustrzyki roll cheese as well. It's naturally smoked and has a specific taste, which is why it pairs perfectly with delicate chicken. Bland fillets? Forget it. In this version, they have that hint of boldness. The dish also requires mushrooms, which are known always to create a great duo with cheese. They can be button mushrooms, but this dish tastes delicious with forest mushrooms.

Ustrzyki-style chicken

Ingredients:

  • 1 kg of chicken breasts,
  • 0.5 kg of your favourite mushrooms,
  • 14-16 slices of Ustrzyki roll cheese,
  • Two onions,
  • Two cloves of garlic,
  • 240 ml of broth,
  • Three tablespoons of butter,
  • Three tablespoons of all-purpose flour,
  • salt and pepper to taste,
  • a sprig of fresh rosemary is optional.

Preparation method:

  1. Clean the chicken breasts from membranes and divide them into smaller pieces. Gently pound each piece. Sprinkle the cutlets with salt and pepper on both sides, then coat them in flour.
  2. Heat the butter in a pan and add the meat. Fry on both sides until browned. Transfer to a baking dish.
  3. Clean and rinse the mushrooms thoroughly, then slice them. Peel and finely chop the onion and garlic. In the same pan where the chicken was fried, sauté the vegetables and mushrooms. Finally, add the broth and bring to a boil.
  4. Add a tablespoon of flour to a small amount of broth and mix. Pour the mixture into the sauce and stir again.
  5. Pour the sauce over the arranged pieces of meat in the dish. Decorate the top with slices of cheese.
  6. Cover the dish and place it in a preheated oven at 175°C. Bake for 35 minutes. After this time, remove the cover, place the rosemary on top, and leave for another 10 minutes for the cheese to brown.
