Broccoli salad reimagined: A savoury twist with bacon

Broccoli is rich in vitamin C, fibre, and sulforaphane, which doctors believe has potential in combating cancer. Overcooked vegetables do not appear appetising. However, when delicately blanched and mixed into a salad with tasty additions, they have won over many hearts.

Broccoli salad often features with feta cheese and sunflower seeds. A light dressing made with olive oil, honey, and lemon juice complements such a combination. However, this time I opted for a more savoury version. I combined broccoli florets with cauliflower, added fried bacon, and mixed everything with a creamy Greek yoghurt-based dressing.

Fruity add-ins for broccoli salad

You can enhance the salad with fresh or dried fruits. If you're seeking something crunchy, opt for an apple, making sure to sprinkle it with lemon juice to prevent it from darkening. Craving juiciness and refreshment? Add grapes or orange segments. And if you want to heighten the sweet notes, choose dried cranberries. My list of ingredients doesn't include fruit add-ins, but perhaps you'll enjoy them.

Recipe for broccoli salad with bacon

You can omit the cauliflower in the salad and include more broccoli florets if preferred.

Ingredients:

                  

  • 1 small broccoli,
  • a few cauliflower florets,
  • 300 g of smoked bacon,
  • 200 g of yellow cheese in a block,
  • 1 red onion,
  • 5 sun-dried tomatoes in oil,
  • 2 tablespoons of Greek yoghurt,
  • 1 tablespoon of mayonnaise,
  • 1 tablespoon of lemon juice,
  • salt and pepper to taste.

Instructions:

        

  1. Divide the broccoli and cauliflower into small florets, wash them, and place them into boiling water for 2 minutes. Remove them onto a colander and rinse with cold water. Allow them to drain.
  2. Fry the diced bacon in a dry pan.
  3. Slice the onion, drain the tomatoes and cut them into strips, and grate the yellow cheese using a coarse grater.
  4. In a large bowl, combine all the ingredients: blanched broccoli and cauliflower florets, fried bacon, sliced onion, sun-dried tomatoes, and grated yellow cheese.
  5. In a separate bowl, mix Greek yoghurt with mayonnaise, tomato oil, and lemon juice. Season with a pinch of salt and pepper. Toss the salad with the dressing.
