It combines the crunchiness of white cabbage and Chinese cabbage, the sweetness of carrots, and the mild spiciness of leek, while the creamy dressing completes it exquisitely. Ingredients for the coleslaw:
- 1/2 head of white cabbage,
- 11 oz of Chinese cabbage,
- 11 oz of carrots,
- 4 oz of celeriac root,
- white part of the leek.
Ingredients for the dressing:
- 2 oz of Greek yoghurt,
- 2 teaspoons of honey mustard,
- 1 clove of garlic,
- 1/2 teaspoon of salt,
- 1/4 teaspoon of black pepper.
Preparation method:
- Wash and dry all the vegetables thoroughly. Shred the cabbages into thin strips, grate the carrot and celeriac, and slice the leek into half-moons.
- Mix all the dressing ingredients in a small bowl into a smooth mixture.
- Combine all the prepared vegetables in a large bowl. Pour the prepared dressing over them and mix thoroughly.
- Cover the bowl with cling film and place in the fridge for at least an hour to allow the flavours to meld.
