Courgette fries: The crispy, healthy alternative to potato classics

Although fries made from potatoes remain the most popular choice, they face stiff competition. Numerous other vegetables can be transformed into this crispy snack.

These vegetables often vie against each other. Potato pancakes or those made with courgettes? The same dilemma applies to fries. The classic variety or the healthier ones made from green vegetables? Essentially, one dish doesn't exclude the other. However, when it comes to fries, it must be said that those made from courgettes are healthier and lighter.

Why choose courgette fries?

Courgette fries are an excellent option for those who want to enjoy this tasty snack while avoiding excess calories. Courgettes are low in calories, rich in vitamins and minerals, and frequently feature in dietary recipes. With fries, the preparation method is crucial. You can opt to deep-fry traditionally or bake them in the oven. The latter choice is definitely lighter and healthier.

Courgette fries, in any form, can be more than just a side dish for lunch; they also make a delicious, warm snack. They pair beautifully with a simple yoghurt dip flavoured with garlic or chives.

The coating matters

What else distinguishes courgette fries? They are exceptionally mild in flavour, but adding a coating can transform them into a snack with character. Herbs, a mix of Provençal herbs, or basil and thyme suit them beautifully. Their flavour is also enhanced by paprika or garlic. However, the star addition is Parmesan cheese, which gives the courgettes an original taste.

Courgette fries

Ingredients:

  • 2 young courgettes,
  • flour,
  • salt, pepper, ground garlic, paprika, Provençal herbs to taste,
  • 2 eggs,
  • 3 tablespoons of milk,
  • 1 cup of breadcrumbs,
  • just under a cup of grated Parmesan cheese.

Preparation method:

  1. Wash the courgettes, dry them, and trim the ends. Halve each one, then slice them lengthwise to create fries no thicker than 2.5 cm.
  2. In a deep bowl, combine the flour, salt, pepper, ground garlic, and other spices. Add a few courgette strips at a time and shake the bowl to coat them thoroughly with the flour and spices. Place them on a plate.
  3. Beat the eggs with a fork and mix in the milk.
  4. On a separate plate, mix the breadcrumbs and grated cheese thoroughly.
  5. Preheat the oven to 220 degrees Celsius. Line the baking trays with parchment paper.
  6. Dip the flour-coated courgette pieces thoroughly in the egg mixture, then in the breadcrumb and cheese coating.
  7. Arrange the prepared courgette pieces side by side on the baking tray.
  8. Bake the fries in the preheated oven for about 10–15 minutes, until the coating is browned.
