How to prepare aubergine?

Choosing the right aubergine is the first step to success. Look for fruits with smooth, glossy skin, free of blemishes and damage. The aubergine should be firm and feel heavy for its size.

Before frying, the aubergine needs to be properly prepared. Cut it into slices about 1 cm thick, salt them, and leave them for about 30 minutes. This will remove the bitterness and improve the taste.

Recipes for pan-fried aubergine

Breaded aubergine

Ingredients:

  • 1 aubergine
  • 40 grams of Parmesan cheese
  • 80 grams of breadcrumbs
  • 50 grams of flour
  • 2 eggs
  • Oil for frying
  • Salt and pepper to taste

Preparation Method:

  1. Slice the aubergine into approximately 1 cm thick slices and salt each one. Place them in a colander and cover with a weight for 45-60 minutes.
  2. Rinse the aubergine slices, then dry them with a cloth or paper towel.
  3. On a plate, sprinkle flour, beat the eggs with salt and pepper, and mix the breadcrumbs with finely grated cheese.
  4. Bread the aubergine slices in flour, egg, and the breadcrumb-cheese mixture.
  5. Fry the prepared aubergine slices in well-heated oil.
  6. Serve them sprinkled with salt.

Ingredients:

  • 1 aubergine
  • 100 grams of bacon slices
  • 100 grams of Gouda cheese slices
  • 1 egg
  • Wheat flour
  • Breadcrumbs
  • Olive oil
  • Salt to taste

How to fry aubergine in a pan? Tips

For frying aubergine, it's best to use a pan with a non-stick coating. Choose an oil with a high smoke point, such as rapeseed oil or olive oil. Heat the pan over medium heat.

Fry the aubergine on both sides until it becomes golden and crispy. Remember not to use too much oil, as aubergine easily absorbs it. After frying, drain the slices on a paper towel.
