Creamy Montenegrin mushroom soup
Ingredients:
- 4 cloves of garlic,
- olive oil,
- about 300 grams frozen or fresh mix of onions, carrots, and celery,
- about 700 grams of mushrooms,
- four tablespoons of sour cream,
- about 900 ml of chicken stock or water.
Preparation:
- Preheat the oven to 180°C.
- Peel and finely chop the garlic, then place it in a large pot over medium heat.
- Add two tablespoons of olive oil and the frozen vegetables.
- Fry for a few minutes, adding about 500 grams of mushrooms and a pinch of black pepper.
- Cook for 10 minutes, then pour in the stock or about 900 ml of boiling water if not using stock.
- Slice the remaining 200 grams of mushrooms, place them on a baking sheet with a bit of olive oil, salt, and pepper, then bake for 15 minutes.
- Finally, blend the soup to the desired consistency, pour into four bowls, add a tablespoon of sour cream to each serving, and garnish with crispy mushrooms.
