Simple recipe for kefir chocolate cake

Ingredients:

  • 300g plain flour,
  • 300ml kefir,
  • 200g sugar,
  • 120ml vegetable oil,
  • 2 eggs,
  • 25g cocoa powder,
  • 2 tablespoons plum jam,
  • 2 teaspoons cinnamon,
  • 2 teaspoons baking powder,
  • a pinch of salt.

For the glaze:

  • 80ml double cream,
  • 70g dark chocolate.

Preparation:

  1. In a large bowl, pour the kefir and oil, add the eggs and sugar. Mix thoroughly until the ingredients are combined.
  2. Add the plum jam and mix again to ensure the mixture is uniform.
  3. Sift the flour, cocoa, cinnamon, baking powder, and salt in a separate bowl.
  4. Gradually add the dry ingredients to the wet ones, gently mixing to avoid lumps.
  5. Pour the batter into a baking tin lined with parchment paper and smooth the surface.
  6. Place in an oven preheated to 180°C and bake for about 60 minutes, until a skewer inserted into the centre of the cake comes out clean.

While the cake cools, prepare the glaze. Heat the cream in a small pan and add the broken chocolate. Stir until the chocolate is completely melted and a smooth mixture forms. Pour the ready glaze over the cooled cake and wait for it to set.
