Italian cuisine, celebrated for its simplicity and quality ingredients, finds an excellent example in panuozzo. The foundation of panuozzo is similar to pizza dough. It is baked in a wood-fired oven, which imparts a unique flavour and aroma. The ingredients of panuozzo often include mozzarella, tomatoes, Parma ham, and fresh herbs. However, you can personalise them by adding, for instance, olives or artichokes.

How to make panuozzo dough at home?

No special equipment is needed to make a panuozzo sandwich, and a professional pizza oven or stone is unnecessary for baking this speciality. To simplify the preparation of the yeast dough, a stand mixer can be used, although hand-kneading is also effective.

Ingredients:

  • 260 grams of type 00 flour,
  • 300 millilitres of warm water,
  • 2 teaspoons of salt,
  • 1 teaspoon of yeast,
  • Olive oil.

Preparation method:

  1. Combine the flour with water, salt, and yeast, then knead until the dough is smooth.
  2. Allow the dough to rise for approximately 2 hours.
  3. Shape the dough into long rolls and bake in a wood-fired oven or in an oven preheated to 230°C for about 10 minutes.
  4. After baking, slice the rolls in half and fill with your preferred ingredients.
