Plum cheesecake: The perfect autumn indulgence

There are countless ideas for cheesecake, but this one with plums stole my heart. It's a simple yet unusual combination, as plums often end up in yeast or shortcrust pastries than as an addition to cheese filling. However, it's worth trying this combination because plums and cheesecake complement each other perfectly.
Cheesecake with plums
Autumn is the season for plums, so it's worth taking full advantage of their availability. Cheesecake with the addition of these fruits will impress even the most discerning sweets connoisseurs. It's simple to prepare, so you don't need to stress about the baking process.
Ingredients:
- 3 eggs,
- 7 tablespoons vegetable oil
- 100 grams sugar
- 1.5 teaspoons baking powder
- 200 grams of plain flour
Cheese mixture:
- 6 egg whites,
- 1-kilogram cheesecake quark,
- 200 grams sugar,
- 2.5 tablespoons potato starch.
Plums:
- 280 grams of plums,
- 3 tablespoons raspberry pudding mix,
- 1 teaspoon cinnamon.
Crumble:
- 140 grams butter,
- 100 grams sugar,
- 150 grams of plain flour.
Instructions:
Step 1. Start with the base. Crack the eggs into a bowl, add the sugar, and mix until light and fluffy. Add the baking powder, pour in the oil, and mix again.
Step 2. Add the flour to the mixture and mix thoroughly to avoid any lumps.
Step 3. Proceed to the cheese filling. Whip the egg whites until stiff peaks form, then add the sugar and potato starch. Gradually add the cheesecake quark, mixing the ingredients.
Step 4. Halve the plums and remove the stones. Add the raspberry pudding mix and cinnamon, then stir.
Step 5. Prepare the crumble. Melt the butter and pour it into a bowl. Combine it with the sugar and flour, kneading the mixture until it resembles crumbs.
Step 6. Line a baking tray with parchment paper. Pour in the egg and flour mixture, smoothing it out evenly. Then, fill the tray with the cheese mixture. Arrange the plums on top, sprinkle the crumble over them, and place them in an oven preheated to 170°C. Bake for one hour.
Step 7. Sprinkle the baked and slightly cooled cheesecake with icing sugar and cut into portions. Enjoy!
