Simply reach for cottage cheese, an excellent substitute for quark. Add a few simple ingredients, chocolate, and fruits, and you can indulge in sweet pleasure.

Single-serving cottage cheese cheesecake

Cottage cheese is not only a quick snack but also a healthy, high-protein base for making desserts. Besides breakfast pancakes, it can also be used to make a delightful mini cheesecake in a ramekin. Preparing such a dessert takes just a few minutes, so there's time for it even on busy days.

The cheesecake is fluffy and delicate, yet healthy. Cottage cheese is a rich source of protein, and using sugar-free vanilla pudding along with sweeteners like xylitol or erythritol allows you to reduce the sugar content in the dessert. It's an ideal option for a dessert or sweet snack that satisfies the craving for something sweet without the need to bake an entire cake.

Ingredients:

  • 200g cottage cheese,
  • 1 egg,
  • a pinch of salt,
  • 1.5 tablespoons of sugar-free vanilla pudding,
  • 2 tablespoons of erythritol,
  • half a teaspoon of baking powder,
  • vanilla extract,
  • 3 tea biscuits,
  • 2 pieces of chocolate,
  • blueberries or raspberries (optional)

Instructions:

  1. Transfer the cottage cheese to a tall container and blend it into a smooth cream.
  2. Separate the egg white from the yolk and beat with a pinch of salt until stiff peaks form.
  3. Add the yolk, pudding, erythritol, baking powder, and vanilla extract to the egg white, and briefly mix or stir.
  4. Layer the tea biscuits at the bottom of the ramekin.
  5. Pour in the prepared mixture and insert pieces of chocolate. You can use white, milk, or dark chocolate.
  6. Place the ramekin in an oven-safe dish filled with water.
  7. Put it in an oven preheated to 180 degrees Celsius for 35 minutes.
  8. After this time, turn off the oven and leave the cheesecake inside for another 5 minutes.
  9. Serve with powdered sugar and blueberries or raspberries.

Enjoy the delicious cheesecake after it cools down. You can make powdered sugar from erythritol if you want to further lighten the dessert. Bon appétit!
