Rhubarb dumplings: A tangy twist on a classic
Grandma's dumplings with plums are one of those meals remembered with an undeniable smile. This dish also makes an appearance in my home, although I choose a different vegetable instead of plums.
Dumplings with plums are a classic, but those with rhubarb are just as good. As soon as they appear on the table, everyone rubs their hands in anticipation. The soft dough, sweet and tangy filling with a hint of citrus, and a sprinkle of sugar mean that every time I return to the kitchen, I find only empty plates. It's the taste of summer enclosed in a dumpling, guaranteed to make you smile with delight.
Rhubarb Dumplings
This vegetable isn’t only great in cakes and compotes but also in traditional dishes like dumplings.
Rhubarb Dumplings are a delightful dish that perfectly combines the sour, refreshing taste of rhubarb with the sweet, delicate potato mixture. The addition of lemon juice and zest adds even more freshness and zestiness. Thanks to this, the dumplings taste like summer enclosed in a potato ball.
Ingredients:
- Approx. 800 grams of boiled potatoes,
- 1.5 cups of plain flour,
- 1 egg,
- 2–3 stalks of rhubarb,
- lemon zest and juice to taste,
- sugar.
Additionally:
- butter to melt,
- sugar for sprinkling.
Preparation method:
- Drain the boiled potatoes and mash them into a smooth mass.
- Add the egg, flour, and salt. Knead the dough into a uniform mass. If the dough is too sticky, add more flour.
- Wash, peel, and cut the rhubarb into small pieces. Add sugar, lemon juice, and zest to taste (optional).
- Divide the dough into equal parts and form balls. Then flatten them on your hand and place a portion of the rhubarb filling in the centre of each ball.
- Seal the edges of the dough to create closed dumplings.
- In a large pot, bring salted water to a boil. Gently place the dumplings into the boiling water and cook for about 15 minutes until they float to the surface.
- Remove the cooked dumplings from the water with a slotted spoon and serve immediately.
The dumplings taste great drizzled with butter and sprinkled with sugar. You can also enhance the sweetness by serving them with whipped cream. It's a sweet indulgence and a delicious journey reminiscent of summer visits to grandma's place. Enjoy!
