Over the years, I've tried different tricks—adding milk, cream and even processed cheese. However, it wasn't until I used sparkling water that I found a method that truly makes a difference.   • 4 fresh eggs,
  • 2 tablespoons of sparkling water,
  • A pinch of salt (to taste),
  • Freshly ground black pepper (to taste),
  • 1 teaspoon of clarified butter (for frying),
  • Optional: Favourite additions (e.g., chopped chives, spinach leaves, tomatoes).

Preparation:

            

  1. Crack the eggs into a bowl. Add the sparkling water, salt and freshly ground black pepper.
  2. Vigorously whisk the mixture with a fork or whisk until the ingredients are well combined and small air bubbles form on the surface. Do not beat for too long; the aim is just to combine the ingredients.
  3. In a pan, melt the clarified butter over low heat. The butter should melt but not brown.
  4. Pour the prepared egg mixture into the heated pan.
  5. Cook the scrambled eggs over very low heat, gently stirring occasionally with a spatula. The aim is for the eggs to set slowly and evenly, maintaining their fluffiness. Do not cook for too long, as the scrambled eggs should remain slightly moist.
  6. Near the end of cooking, if desired, add your favourite ingredients, such as chopped chives, fresh spinach leaves or chopped tomatoes. Gently stir until the additions are heated through.
  7. Transfer the finished scrambled eggs with sparkling water to a plate. They can be additionally sprinkled with fresh herbs, such as chopped chives or rocket leaves. Serve immediately, preferably with crusty bread. Enjoy!
