The irresistible allure of this easy no‑bake cake recipe
When preparing cakes, you can let your imagination run a little wild and create a dessert that makes your mouth water at first sight. Such is the case with the layered cake, which in my home has been named Pillow Cake.
This cake will win over every sweet tooth. It owes its name to the long ladyfingers, which resemble pillows. Plus, a simple whipped cream, digestive biscuits, chocolate, and guaranteed sweet success. It doesn't take much to conjure up a dessert that will impress your guests.
Pillow cake
When Pillow Cake appears on the table, everyone immediately grabs their plates. Even the name piques interest, and the taste ensures everyone goes for seconds. It's a simple no-bake cake recipe that even an amateur baker can handle.
All it takes is a few simple ingredients and a bit of patience. Although the preparation process is quick and easy, the cake needs to spend at least a few hours in the refrigerator, preferably overnight. This way, the layers of digestive biscuits soften, and the sweet flavours blend together.
Ingredients:
- 300 grams of cocoa digestive biscuits,
- 500 millilitres of double cream (36%),
- 500 grams of mascarpone cheese,
- 3 tablespoons of icing sugar,
- 1 package of cream stabiliser,
- 1 package of dulce de leche,
- 100 grams of long ladyfingers,
- 100 grams of milk chocolate,
- 3 tablespoons of single cream (30%).
Instructions:
Step 1. Line the bottom of a baking pan with dimensions of about 28 x 18 centimetres with parchment paper. Place a layer of cocoa digestive biscuits.
Step 2. Pour well-chilled double cream into a bowl and whip it with icing sugar. Then add mascarpone cheese and mix until smooth.
Step 3. Spread half of the mixture over the layer of digestive biscuits. Then add another layer of digestive biscuits, dulce de leche, and once again digestive biscuits. Cover the entire mixture with the remaining whipped cream.
Step 4. Place digestive biscuits soaked in milk on top and pour melted milk chocolate over the whole thing. Refrigerate overnight.
Step 5. Cut the cake into pieces the next day and enjoy the taste. It’s perfect for family gatherings, birthday parties, name-day parties, or simply as a sweet addition to a cup of tea. Enjoy!
