As it turns out, the key may be a simple trick that surprises with its effectiveness – adding a few ice cubes or a cup of cold water.

While the taste of broth is the most important, there is no denying that its aesthetic appearance adds elegance to home meals. Perfectly clear broth dazzles with its crystal colour, making it not only tasty but also visually appealing. How can one achieve such an effect?

The foundation is, of course, the proper cooking technique: carefully selected ingredients, a gentle flame, and regularly skimming the scum. However, even with these methods, the broth might not be as clear as we'd like. Fortunately, there is a simple way to remedy this – adding cold water or ice cubes at the right moment during cooking.

Why does cold water make the broth clear?

It seems that cold water or ice is a trivial solution, but its mechanism of action is surprisingly effective. Sudden cooling of the broth triggers several reactions:

  • protein coagulation: Cold water causes proteins in the meat and vegetables to coagulate faster. As a result, tiny particles settle at the bottom of the pot, making the broth clear.
  • preventing cloudiness: Ice cubes help stop the dissolution of fats and other substances that can cause cloudiness.

How to do it?

  1. during cooking: When the broth is almost ready and all the scum has been removed, pour a cup of cold water into the pot or add a few ice cubes.
  2. after cooking: If you want to ensure your broth is perfectly clear, you can strain it through a dense sieve or cheesecloth.
