Turkish breakfast: Recipe for Turkish eggs

Turkish eggs are the perfect choice if you're searching for a nutritious and unique breakfast idea. The combination of a swiftly prepared yoghurt sauce, gently poached eggs, and aromatic butter blends perfectly with crispy bread.

Ingredients:

  • 2 eggs
  • 250 ml of thick natural yoghurt
  • 1 clove of garlic (pressed)
  • 1 tablespoon vinegar (wine or apple cider)
  • 30 grams butter
  • 1 teaspoon pul biber (can be substituted with red pepper flakes)
  • A pinch of salt
  • Optionally: dried mint, freshly ground pepper

  2. Bring water to a boil in a saucepan, add the vinegar. Stir the water to create a whirlpool and gently slide an egg into it. Cook for 2 to 3 minutes, then remove the egg with a slotted spoon.
  3. Melt the butter in a saucepan, add the pul biber, and sauté briefly.
  4. Spread the yoghurt on a plate, place the eggs on top, and drizzle with the hot butter. Serve with crispy bread.
