Whip up summer bliss: Strawberry mousse made easy

When strawberries start to appear in shops, it's time to whip up a dessert. Rather than blending them into a smoothie, I transform them into a delightful foam.

Strawberries captivate with their sweetness, entice with their fragrance, and evoke memories of summer. The season typically begins in May and continues until July, making it well worth taking full advantage of this time. The first punnets are already appearing at markets, and each week there will be more. This will bring prices down, allowing you to savour them without worrying about your budget. I turn strawberries into a fluffy mousse that delights with its delicate texture. It's a splendid alternative to a rich mousse or a laborious cake.

Strawberry mousse

This dessert marries the fruity and bold flavour of strawberry mousse with the lightness of whipped cream. It's all enhanced with an extra helping of fresh strawberries, which serve as a delicious decoration. The preparation is incredibly quick, allowing you to savour the taste of summer captured in a cup in no time.

Vegetarians and vegans can replace gelatine with agar. For 1 teaspoon of gelatine, typically 0.5 to 2 teaspoons of agar are used. Bear in mind, it sets even more swiftly, so you need to be quick with mixing. However, it's an excellent gelatine alternative, offering a very neutral taste and smell.

Ingredients:

  • Approximately 450 grams of fresh strawberries,
  • 3-4 tablespoons of icing sugar,
  • 1 teaspoon of lemon juice,
  • 300 millilitres of chilled double cream,
  • 1 teaspoon of gelatine,
  • 2 tablespoons of water.

Preparation method:

  1. Wash the strawberries, remove the stems, and leave to drain.
  2. Blend them and press through a sieve to remove seeds. If the consistency with tiny pieces is acceptable, you can skip the sieving step.
  3. Dissolve the gelatine in cold water and set aside for a few minutes to thicken.
  4. Then heat gently until it dissolves.
  5. Whip the cream until stiff peaks form, along with the icing sugar.
  6. Add a few tablespoons of the strawberry purée to the dissolved and cooled gelatine and mix.
  7. Pour the gelatine into the remaining strawberries, mix and fold into the whipped cream.
  8. Gently combine the ingredients and transfer them into glass bowls or glasses.
  9. Place in the fridge for a few hours to set.

Garnish the completed dessert with fresh strawberries. You may also add a dollop of whipped cream or pair the strawberry mousse with a chocolate one. Enjoy!
