Recipe for eggs in kefir and horseradish sauce

Eggs in kefir and horseradish sauce are a light, distinctive option that seamlessly fits into the Easter menu. They are fresh, aromatic, and surprisingly easy to prepare. If you're weary of heavy mayo, this recipe will be a welcome change.

Ingredients:

  • 6 hard-boiled eggs,
  • 250 millilitres of kefir,
  • 1–2 teaspoons of grated horseradish (or to taste),
  • 1 teaspoon of mustard,
  • 1 teaspoon of lemon juice,
  • 1 tablespoon of finely chopped chives or dill,
  • salt and pepper to taste.

Preparation:

  1. Boil the eggs until hard, then cool, peel, and cut them into halves or quarters.
  2. In a bowl, mix kefir with horseradish, mustard, lemon juice, season with salt and pepper, and add chopped chives or dill.
  3. Allow the sauce to sit for 10–15 minutes to let the flavours meld.
  4. Arrange the eggs on a platter and either pour the sauce over them or serve the sauce separately in a bowl as a side.

Why choose kefir and horseradish?

Kefir is not only a tasty sauce base but also a natural source of probiotics that support gut microbiota and improve digestion. It contains B vitamins, calcium, magnesium, and protein, while being low in calories, making it an ideal alternative to heavier creams or mayonnaise.

Horseradish is a true "natural antibiotic" – it has antibacterial and antiviral effects, supports immunity, and benefits the respiratory system. Its sharp flavour stimulates the appetite and pairs well with the delicate eggs and sour kefir.

The combination of these two ingredients is not only a delicious duet but also a healthy option for the holiday table, helping with digestion after more substantial dishes.
