Recipe for grilled cucumber and radish salad
You can make the salad with either greenhouse or field cucumbers. Greenhouse cucumbers only need to be washed thoroughly, while field cucumbers should also be peeled.
Ingredients:
- 2 long greenhouse cucumbers or 4 field cucumbers,
- 400 grams canned corn,
- 1 onion (red, white, or scallions),
- a bunch of radishes,
- 150 grams Greek yogurt,
- 1 tablespoon mayonnaise,
- 1 teaspoon mustard,
- 1 tablespoon honey,
- juice of half a lemon,
- 2 cloves garlic,
- a bunch of dill,
- salt and pepper to taste.
Instructions:
- Wash the cucumbers and slice them thinly. Remove the leaves and roots from the radishes, wash, and slice them as well. Peel the onion and slice it thinly.
- Place the prepared ingredients in a large bowl. Add the drained canned corn.
- In a separate container, mix the yogurt with mayonnaise, mustard, honey, and lemon juice. Add the garlic, pressed through a garlic press, and finely chopped dill.
- Season with salt and pepper to your taste.
- Pour the dressing over the salad and mix.
