Grilled meatballs: The versatile star of your next barbecue

Pork neck, sausages, and blood sausages are barbecue classics. Everyone loves them, though kids often have their reservations. With children in mind, I started preparing meatballs, but it quickly became apparent that they appeal to all ages. They're delicious and well-seasoned.

When we invite friends over for a barbecue, we usually go with a tried-and-true menu. Sausages or blood sausages always turn out great. We've also mastered pork neck and chicken fillets. However, we're a bit more hesitant with ground meat, as we don’t use it as often on the grill.

What kind of ground meat is best for grilling?

Ground meat is ideal for grilling; think burgers, which Americans excel at. Ground meat is also popular in the Balkans. The famous koftas are skewers made of ground meat seasoned with a hint of oriental spices, prepared on the grill. You can grill dishes made from ground beef, pork, and even poultry.

Serve meatballs with a refreshing salad

If you're new to grilling dishes made from ground meat on the grill, try starting with meatballs. The recipe is straightforward. This dish also has another advantage—it doesn't require marinating. It's best to use freshly ground meat or request it at the store. Grilled meatballs taste great with Greek tzatziki sauce or a traditional cucumber salad.

Ingredients:

  • 450 g of ground meat (beef, pork, poultry, or a mix),
  • 2 cloves of garlic,
  • 1 egg,
  • Salt and pepper to taste,
  • Paprika and preferred spices to taste,
  • A few sprigs of parsley,
  • Oil,
  • Flour or breadcrumbs for thickening.

Preparation Method:

  1. Remove the meat from the fridge to bring it to room temperature.
  2. Finely chop the parsley.
  3. Add the egg and crushed garlic, then season to taste. Mix the ingredients by hand, adding the parsley last.
  4. If the mixture is too runny, thicken it with flour or breadcrumbs.
  5. Wet your hands and form the mixture into meatballs.
  6. Place them on a tray and brush each with oil.
  7. Grill them on a hot grill for about 10-15 minutes, turning occasionally.
