Fresh and high-quality herring fillets guarantee the success of this dish. It's worth serving fried herring with side dishes that will enhance their flavour without overpowering it. They go well with boiled potatoes with lots of fresh dill. Herb sauces based on yogurt or cream, with chives or parsley, work well. It’s good to season them with lemon juice, which is always a great match for fish. They also taste great simply served with horseradish.

Fried herring is very easy to prepare; anyone can handle it. First, soak the fish in water or milk to remove excess salt. Then dry them and prepare the batter. It’s best to fry them in butter, which gives them a pleasant flavour. However, this requires attention to keep the right temperature to avoid burning. Clarified butter or oil can also be used.

Fried herring

Ingredients:

  • 6 cleaned herring fillets or herring pieces,
  • 250 millilitres of milk,
  • 310 millilitres of flour,
  • 2 eggs,
  • 1 teaspoon of butter,
  • Salt and pepper to taste,
  • Dried garlic to taste, optional,
  • Butter or oil for frying.

Method of preparation:

  1. Melt the teaspoon of butter. When it cools, mix it with the milk.
  2. Add flour and eggs. Mix the batter again; it should have a fairly thick consistency.
  3. Dip the herring in the batter.
  4. Fry them in heated fat until golden brown.
