Don't ruin the taste of sauerkraut

Even when you buy the best sauerkraut, you can spoil its taste. It’s all due to improper cooking. It should be done so that the cabbage is soft but not overcooked and, most importantly, retains its intense aroma. Cooking this pickled vegetable requires only about 20 minutes, and longer cooking will deprive it of its character and flavour. It's important to remember this, because we often leave it in boiling water for too long.

Add some spices

Sauerkraut is ready to eat and simply does not require long cooking. To mellow the sour taste, you can rinse it under running water. If your sauerkraut is exceptionally sour and you find its taste too intense, you can also add some shredded fresh cabbage. This will balance the flavour. Ideal spices for cabbage are bay leaves, allspice, juniper berries, and black pepper, as they add depth of flavour and improve aroma.

Cabbage provides vitamins and minerals that support good health. It also contains fibre, which aids digestion.
