Zucchini muffin recipe
Take the eggs and yogurt from the fridge beforehand to let them reach room temperature.
Ingredients:
- 1 zucchini
- 2 cups of flour
- 1.5 teaspoons of baking powder
- 100 grams (about 1 cup) of grated yellow cheese
- 2 eggs
- 200 grams (about 1 cup) of natural yogurt
- 2 tablespoons of olive oil
- 1 clove of garlic
- 1 teaspoon of dried or freshly chopped basil
- Salt and pepper to taste
Instructions:
- Wash the zucchini, dry it, and grate it coarsely with the skin on. Sprinkle with salt and let sit for 10 minutes.
- Sift the flour into a bowl and mix it with the baking powder.
- In a separate bowl, place the zucchini after squeezing out the water, and mix it with the grated yellow cheese, eggs, natural yogurt, and olive oil.
- Add the flour with baking powder, press the garlic clove through a crusher, and add a teaspoon of fresh or dried basil, a pinch of salt, and freshly ground pepper. Mix the ingredients thoroughly using a large wooden spoon or spatula.
- Spoon the mixture into silicone muffin moulds. Bake for 25 minutes at 200°C (390°F).
