Their delicate taste and crunchy texture make them an ideal ingredient for many dishes. It's worth using this short season to savour them, and an asparagus casserole will be a great option for a family dinner. Not only will it be tasty and nutritious, but also healthy!

Asparagus casserole will conquer your kitchen, but first choose the right vegetables

To prepare an asparagus casserole, you need a few basic ingredients. Asparagus, of course, is crucial, but the additions that enhance their taste are equally important. When choosing asparagus, focus on their freshness. Here are some tips to help you:

  1. Asparagus should be firm and elastic. Avoid those that are soft or have wilted ends. Fresh asparagus has a vibrant green colour and closed tips.
  2. Choose medium-thick ones—they are the tastiest.
  3. Fresh asparagus should have a delicate, pleasant smell. If the aroma is sour, it's better not to buy them.
  4. After purchase, store the vegetables in the refrigerator; it's worth placing them upright in a container with water.

Asparagus casserole - recipe

If you like asparagus and have already chosen the best ones, you can proceed to prepare an exceptionally delicious and aromatic vegetable casserole. The ingredients are healthy and mostly low-calorie, so you can enjoy a very large portion.

Ingredients:

  • 450 grams of green asparagus,
  • 200 grams of cherry tomatoes,
  • 1 large red bell pepper,
  • 2 cloves of garlic,
  • 4 large eggs,
  • 200 grams of feta cheese,
  • 1 tablespoon of olive oil,
  • 1 teaspoon of oregano,
  • 1/2 teaspoon each of basil and thyme,
  • Salt and pepper.

Instructions:

  1. Start by washing and drying the vegetables. Begin with the asparagus. Trim the woody ends, then cut into cubes.
  2. Remove the seed core from the bell pepper and cut it into strips. You can cut the tomatoes in half, but it is not necessary.
  3. Crush the garlic using a press.
  4. Place all the vegetables in a baking dish, drizzle them with olive oil, and sprinkle with spices. Mix everything thoroughly so the ingredients are evenly seasoned.
  5. Beat the eggs with a whisk or fork (as for scrambled eggs) until you get a uniform mass. Crumble half of the cheese and add it to the eggs. Pour this mixture over the vegetables. You can shake the dish so the mixture gets into every nook and cranny.
  6. Place slices of feta cheese on top.
  7. Put the casserole in an oven preheated to 200°C and bake for 20 minutes.

The asparagus casserole tastes best warm. It will also be a wonderful option for dinner with family or friends. It doesn’t take much time to prepare, and the end result will surely amaze all household members. Experiment with different ingredients and enjoy the taste of spring on your plate.
