Jamie Oliver's brownie
Ingredients:
- 250g of good quality dark chocolate (70%),
- 250g of unsalted butter,
- 4 large free-range eggs,
- 250g of golden caster sugar,
- 2 heaped tablespoons of plain flour,
- 2 teaspoons of baking powder,
- 2 heaped tablespoons of high-quality cocoa powder.
Instructions:
- Preheat your oven to 180°C (Gas Mark 4).
- Tear off a large piece of parchment paper, crumple it under cold water, then lay it out to line a baking tin measuring 20cm by 20cm.
- Put the chocolate in a heatproof bowl, chop the butter, and add a pinch of sea salt. Melt over a pan of gently boiling water, stirring regularly, then remove from the heat and allow to cool slightly.
- Break the eggs into a large bowl, add the sugar, and whisk until the mixture is light and fluffy.
- Sift the flour with the baking powder and then the cocoa. Beat to combine, then fold into the melted chocolate.
- Spoon the mixture into the lined tray and spread out evenly. Bake for 25 to 30 minutes, or until the cake is crispy on the outside but slightly wobbly in the centre.
- Let it cool in the tin for 15 minutes, so the crust becomes crispy while the centre remains moist. Then slice and serve warm. Brownies are delicious with vanilla ice cream, crushed hazelnuts, and caramel popcorn.
