This thick oil with a slightly nutty flavour has found a permanent place in my refrigerator—and thereby also in my daily diet—thanks to a visit from my aunt from Austria. She brought something special to a family gathering, saying that Austrians add it to everything. Indeed, the oil worked well with both fried eggs and creamy soups, but it proved to be particularly effective in a simple combination, paired with tomatoes and garlic.

I tried several times to buy similar oil, but none were as thick and rich as the Austrian one. Now, whenever my aunt comes to visit or someone from the family decides to visit her, I order several bottles because this oil has caught on with other family members as well. I am glad because its health benefits are invaluable.

Use in the kitchen and cosmetics

Pumpkin seed oil, also known as "green gold," is gaining increasing popularity due to its health and cosmetic properties. Cold-pressed, it is rich in vitamins and minerals that support the regeneration of skin, hair, and nails. Its nutty taste and green-brown colour make it a unique addition to many different dishes.

In cosmetics, pumpkin seed oil is considered a key to prolonging youthfulness. It contains antioxidants that neutralise free radicals, delaying the ageing process. Thanks to its moisturising and regenerating properties, it is perfect for caring for dry and mature skin. It also aids in fighting acne.

In the kitchen, this exceptional oil is an exclusive addition to salads, soups, and sauces. Thanks to unsaturated fatty acids, it supports the circulatory system and lowers cholesterol levels. Regular consumption improves the functioning of the digestive system and strengthens the body's natural immunity.

Simple salad with pumpkin seed oil

Austrian cuisine is very simple—its basis is meat from a good source, cheeses, and fresh vegetables, preferably from one's garden.

Ingredients:

  • 2 large tomatoes,
  • 3 cloves of garlic,
  • 2 tablespoons of pumpkin seed oil.

Instructions:

  1. Cut the tomatoes into cubes.
  2. Add garlic sliced very thinly.
  3. Pour the pumpkin seed oil over and let stand for 15-20 minutes to allow flavours to meld.

You can serve the salad with fried eggs or scrambled eggs for breakfast. It also works perfectly with hummus—place the tomatoes with the sauce on top of the dip and scoop up with a crusty baguette.
