Babka with cottage cheese - recipe for the perfect cake

Ingredients:

                                  
  • 5 eggs,
  • 175 grams of cake flour,
  • 200 grams of sugar,
  • 190 millilitres of vegetable oil,
  • 200 grams of cottage cheese,
  • 1.5 teaspoons of baking powder,
  • 100 grams of candied orange peel,
  • icing sugar for sprinkling.

Instructions:

  1. Separate the egg whites from the yolks. Beat the egg whites until they form stiff peaks, gradually adding 75 grams of sugar. Beat the yolks with the remaining sugar until light and fluffy.
  2. Slowly pour the oil into the beaten yolks, continuously mixing at a low speed.
  3. Add the flour and baking powder, followed by the cottage cheese. Mix until the ingredients are combined.
  4. Gently fold in the beaten egg whites using a spatula or mix quickly.
  5. Add the candied orange peel and stir gently.
  6. Pour the batter into a greased and floured pan.
  7. Bake at 180°C for about 50 minutes, or until a skewer inserted into the cake comes out clean.
  8. Once baked, remove the babka from the pan and sprinkle with icing sugar.
