Cheese cookies are the classics our grandmothers and mothers cherished. Today, they make a comeback as a quick and delectable snack to enjoy with coffee or tea. Their unique taste and satisfying crunch make it hard to stop at just one.

Recipe for cheese cookies with sugar

Just a handful of simple ingredients, one rolling pin, and a bit of sugar – that’s all it takes to create cookies no one can resist. They are perfect for family gatherings, holiday celebrations, and as a sweet treat with coffee. And while they may appear plain, they can elicit a "wow" effect with every first bite.

Ingredients (for about 30 pieces):

  • 250 grams of full-fat or semi-fat farmer's cheese (preferably minced),
  • 250 grams of butter,
  • 250 grams of plain flour,
  • A pinch of salt,
  • Granulated sugar for coating.

Preparation:

  1. Quickly knead the farmer's cheese, butter, and flour into a uniform mass, wrap in cling film, and place in the fridge for at least 30 minutes.
  2. After this time, roll out the dough to a thickness of about half a centimetre, cut out circles with a glass, fold each in half, coat in sugar, fold again, and press down.
  3. Place the cookies on a baking tray lined with baking paper, bake at 175 degrees Celsius for 20–25 minutes until golden and crispy.

Why make farmer's cheese cookies?

Cheese cookies with sugar are a timeless classic that combines ease of preparation with exceptional taste. Thanks to the addition of farmer's cheese, we achieve a pastry that is not only soft and delicate but also more satisfying and moist than traditional shortbread cookies. Farmer's cheese, in addition to protein and calcium, also introduces a gentle tangy note that contrasts beautifully with the sweetness of sugar. It’s an excellent idea for a dessert without baking powder or yeast – the entire magic lies in the right balance of fat and cheese. Moreover, these cookies can be prepared in advance and stored in a tin – they become crisper by the day, and their flavour deepens.
