Potato bites with halloumi
Potatoes are a versatile canvas for many culinary experiments, and chips and casseroles are just the beginning. In this recipe, they become the base for crunchy bites that will perfectly replace classic crisps or breaded mozzarella.
This recipe is also brilliant when you don't know what to do with cooked potatoes from the previous day. Bites that are crunchy on the outside, yet soft and moist on the inside. It's an excellent snack for a party, a meeting with friends, or simply as a dinner.
Ingredients:
- 600 grams of potatoes,
- 1 teaspoon of salt,
- 100 grams of smoked ham,
- 2 tablespoons of potato starch,
- 2 eggs,
- 120 grams of halloumi cheese,
- 80 millilitres chopped parsley.
Preparation:
Step 1. Peel the potatoes, cook them until tender, and mash into a smooth purée. Add eggs and potato starch, and mix thoroughly.
Step 2. To the potato mixture, add grated or very finely chopped ham, parsley, and crumbled halloumi cheese. Mix well.
Step 3. Transfer the resulting mixture to a pastry bag. Squeeze portions of the dough into hot, deep oil, cutting off the ends with scissors. It resembles making mini churros. Fry until they are golden brown.
Step 4. You can place the ready bites on a paper towel for a moment to remove excess oil. Serve with a favourite dip, like garlic sauce or sriracha mayo. Enjoy!
