Mushroom and cheese fritters: A savoury twist on tradition

These fritters are perfect for dinner, and their unique additions will surprise savoury flavour enthusiasts. Traditional apple pancakes will soon be a thing of the past.

When I first prepared these fritters for dinner, my family was initially doubtful. While the sweet ones with apples served at breakfast or as an afternoon snack vanish quickly, there's often a preference for savoury meals at dinner. This recipe proved a delightful surprise because the yeast batter conceals cheese and mushrooms.

Mushroom fritters

Savoury fritters can be just as appealing, if not more so, than those with apple and sugar. The preparation is straightforward, with the only challenge being the wait since the yeast dough needs time to rise. After a quick fry, you'll find your plate empty in no time.

These savoury fritters are ideal for dinner, supper, or even a party. The fluffy yeast dough envelopes mushrooms and cheese. They can be served alone, with a dollop of sour cream, mushroom, or tomato sauce, or as a side dish to soups or salads.

Ingredients:

  • 300 grams of plain flour,
  • about 120 millilitres of milk,
  • a pinch of sugar,
  • 2 eggs,
  • 4-5 tablespoons of oil,
  • 25 grams of fresh yeast,
  • 1 teaspoon of salt,
  • 1 tablespoon of dried marjoram,
  • half a teaspoon of herbal pepper,
  • 250 grams of mushrooms,
  • 1 onion,
  • 100 grams of grated cheese,
  • oil for frying.

Preparation method:

  1. Slice the mushrooms and sauté them with the chopped onion in a little oil. They should brown, and the moisture should evaporate.
  2. Set aside to cool.
  3. Crumble the yeast and add warm milk, two tablespoons of plain flour, and sugar, mixing thoroughly.
  4. Allow the starter to sit for 10-15 minutes until the yeast doubles in size.
  5. Sift the remaining flour into a bowl. Add salt, pepper, marjoram, cooled mushrooms, and grated cheese. Mix well.
  6. Add the eggs to the risen starter, mix, and then combine with the other ingredients.
  7. Mix thoroughly until the flour is absorbed.
  8. Drizzle the mixture with oil, knead briefly, and cover with a clean cloth. Let it rise for 40 minutes.
  9. Heat oil in a frying pan.
  10. Grease a spoon with oil and use it to scoop portions of the mixture.
  11. Place the mixture onto the pan and fry for approximately 2-3 minutes on each side until the fritters are golden brown. Use a toothpick to check if they're cooked through.
  12. Place the fried fritters on a paper towel to remove excess oil.
