Princely chicken cutlets: A crispy twist on a classic dish

Many people prefer chicken cutlets over traditional pork cutlets. However, after frying, they often don't fully meet the family's expectations. Unfortunately, poultry fillets tend to be dry without additional ingredients. An alternative to classic strips are tender and flavourful princely cutlets.

This simple dish is a variation on minced cutlets. However, before you start frying them in a pan, set the meat aside in the refrigerator, then coat it in a simple breading. They will turn golden and crispy. In this form, they are perfect as a party snack to dip in colourful sauces.

From simple cutlets to a snack full of nutritional value

You can prepare minced chicken cutlets in many different versions, for example with pieces of bell pepper, broccoli, mushrooms, or tinned corn. If you don't want to serve them fried, put them in the oven. Bake for 10-15 minutes at 180 degrees Celsius, flip them over with a spatula, and bake for another 5-10 minutes.

Another idea for a chicken snack is waffles from Leszek Klimas' recipe. The 2019 World Athletic Physique Champion prepares them without flour and additional fat. His chicken waffles are a great idea for a child's school breakfast.

Recipe for princely chicken cutlets

Chicken cutlets are fried in a larger amount of fat. Choose one that remains stable at high temperatures, such as refined coconut oil or avocado oil.

Ingredients:

  • 1 chicken breast,
  • 250g yellow cheese, such as gouda,
  • 1 egg,
  • 2 tablespoons of mayonnaise,
  • 2 teaspoons of herbes de Provence,
  • salt and pepper to taste,
  • 100g breadcrumbs,
  • 100g flour,
  • oil for frying.

Instructions:

  1. Cut the chicken breast into cubes and transfer to a bowl. Add grated yellow cheese, 2 large tablespoons of mayonnaise and spices. Mix everything together, cover with cling film, and place in the refrigerator for 1-2 hours.
  2. In a separate bowl, mix breadcrumbs with flour and a pinch of salt.
  3. Take the meat out of the refrigerator, scoop with a spoon, and coat in the breading.
  4. Carefully transfer to a pan with heated oil. Fry until golden on both sides.
