Ingredients for butter cake with strawberries

To prepare this cake, you will need the following ingredients:

  • 7 oz plain flour
  • 11 oz strawberries
  • 3.5 fl oz milk
  • 3 eggs
  • 3 fl oz oil
  • 0.35 oz baking powder
  • 3.5 oz sugar
  • 1 tablespoon vanilla sugar

Crumble:

  • 2.5 oz plain flour
  • 1 oz fine flour
  • 2 oz sugar
  • 2.5 oz butter
  • 1 oz almonds

How to prepare butter cake with strawberries

To make the cake, start by preparing the crumble. In a bowl, combine all the crumble ingredients. Knead them by hand until a crumbly mixture forms.

Next, wash 300 g of strawberries, chopping half into small pieces and cutting the rest in half. In a large bowl, whisk 3 eggs with sugar and a tablespoon of vanilla sugar until fluffy. Add the oil and milk, mixing well. Gradually add the plain flour mixed with baking powder. Stir until the mixture is uniform.

Prepare a baking tin by greasing it with butter, then transfer the cake mixture into it. Arrange the halved strawberries on top and sprinkle with the prepared crumble. Preheat the oven to 356 degrees Fahrenheit and bake the cake for about 40-45 minutes, until it turns golden. To check if the cake is done, insert a skewer – if it comes out dry, the cake is baked. After baking, remove the cake from the oven and leave it to cool.

To keep the cake fresh and tasty, it's best to place it in an airtight container or under a cover if you plan to store it at room temperature for 2-3 days.

If you wish to store it for longer, place the cake in the fridge wrapped in cling film or in an airtight container to prevent it from drying out and absorbing odours. Remember to take the cake out of the fridge about an hour before serving, so it can return to room temperature and regain its best texture. This way, the cake will retain its moisture and flavour for longer.
