The highlight of a communion reception is the dessert. A cake is often served, but it's not the only option. Other sweets work well in this role, especially when they're white. An ideal choice for this time of year is a no-bake cheesecake. It's elegant and can be easily prepared at home.

Opt for bucket cheese

No-bake cheesecake is the king of spring and summer desserts. It's considered a seasonal dessert because it tastes best during warm days and pairs well with fruits like strawberries, raspberries, or blueberries.

Perfect for its preparation is bucket quark, which makes the process much easier. Similarly to a traditional baked cheesecake, it requires much less effort. There are also no lumps, and the cheese mixture is silky smooth.

What to look out for when choosing cheese?

The mixture made from bucket cheese is more delicate in taste and less dense than cheese that needs to be ground yourself. It’s worth using one that has already proven successful in other baked goods. It should have a firm, dense consistency, so it doesn't slip off the spoon. A good sign is also that it has no lumps and doesn't float in whey. Additionally, you should pay attention to the ingredients – it should be minimal, without starch, dyes, or thickeners, and without sugar. It's better to sweeten the mixture to your own taste.

Cheesecake with or without a base

You can make the base for the cheesecake with simple sponge cakes. If you choose those with chocolate and jelly, it will affect its taste. Ground biscuits mixed with melted butter also work well.

Another option is a cheesecake without any base. The dessert will still be stable, allowing you to focus solely on preparing the mixture. To make the flavour more intense and rich, it’s worth adding heavy cream and white chocolate to the cheese.

No-bake cheesecake perfect for communion

This recipe doesn't include gelatin. The cheesecake sets thanks to jellies, and I recommend lemon ones as they give the mixture a pleasant aftertaste. Delicate jellies, called transparent, are a good choice too. The cheesecake's perfect white appearance will catch the eye, but you can serve it with fresh fruits. Ideally, these will be finely chopped strawberries with mint. Such a refreshing dessert will surely be enjoyed by the guests.

Ingredients:

  • 1 kg bucket quark for cheesecake,
  • 3 packets of jelly and 355 ml of boiling water,
  • 200 ml heavy cream 30%,
  • Powdered sugar to taste (optional),
  • 300 g high-quality white chocolate,
  • 1 teaspoon vanilla paste (optional).

For the base:

  • 150 g biscuits,
  • 50 g melted butter.

Method of preparation:

  1. Place biscuits and butter in a food processor and blend until the biscuits are finely crushed. Line a cake pan with the mixture, giving it the consistency of wet sand.
  2. Melt the chocolate using a double boiler and set aside to cool.
  3. Transfer the jellies to a container and pour boiling water over them. Stir until dissolved and set aside.
  4. Whip the heavy cream until stiff, adding powdered sugar towards the end.
  5. Add the thickened jelly, bucket cheese, and melted white chocolate to the whipped cream, along with the vanilla paste (optional). Blend the mixture thoroughly; it should have a smooth consistency.
  6. Spread the cheese mixture over the prepared base. Smooth the top.
  7. Chill the cheesecake in the refrigerator for several hours, preferably covered, so the cake doesn't absorb other smells from the fridge.
