We're talking about guinea fowl, which offers meat of an exceptionally delicate taste and rich nutritional value. It's easy to digest yet filling, making it perfect for both daily diets and exquisite dishes served on special occasions.

Guinea fowl – a wealth of flavour and nutritional value

Guinea fowl has a taste similar to game. It is tender, juicy, and rich in nutritional value. It contains little fat yet is an excellent source of protein, B vitamins, iron, and zinc. This makes guinea fowl an ideal choice for those who care about a healthy diet and appreciate gourmet flavours.

Roasted guinea fowl – a recipe for an elegant dinner

Ingredients:

                                              
  • 1 guinea fowl,
  • 2.5 litres of water,
  • 5 tablespoons of salt,
  • 1 teaspoon of marjoram,
  • 1 teaspoon of rosemary,
  • 1 teaspoon of sweet paprika,
  • 1/2 teaspoon of hot paprika,
  • 1/2 teaspoon of black pepper,
  • 4 cloves of garlic,
  • 1 large onion (or 2 smaller ones),
  • kitchen twine for tying the legs.

Preparation:

  1. Wash, clean, and dry the guinea fowl. Tie the legs with twine.
  2. Dissolve the salt in water and submerge the guinea fowl in it overnight.
  3. Preheat the oven to 180°C (356°F).
  4. Remove the guinea fowl from the brine, dry it, and rub with spices.
  5. Place the guinea fowl and chopped onion and garlic in the oven.
  6. Bake for 2 hours.
  7. Cut it open using a sleeve and bake for another 30 minutes, basting with sauce.
  8. Let the meat rest for 10 minutes before serving.
